Beef 🥩 dresses out at 60% hanging weight . You take more than 60% if you control the butcher & get meat usually discarded at the slaughter such as liver, heart, kidneys, tail, sweetbreads, tongue & the head carries 2Lb or more of meat. You could also take the stomachs and intestines. The hide too. Remember you buy a whole animal so you take everything you want.
Beef finishes(retail cuts) at 45%_50%.
You can go in together, the butcher will divide into halves 1/2.
